Yam Swiss Roll



Ingredients:
5 Eggs
100 gm Caster Sugar
1 tsp Yam Essence
120 gm Plain Flour
70 gm Butter (melted)
Filling:
300 gm Cooked Yam (mashed)
100 gm Fresh Cream (Whipped)
1/2 tsp Yam Essence
Method:
  1. Preheat Oven to 200'C ; grease 25 x 35cm (10 x 14-in) baking tin; line with baking paper.
  2. Using electri mixer on full speed, beat eggs and sugar until light and fluffy. Add in Yam essence, mix well. Gently fold in sifted flour, add in melted butter, mix until well combined.
  3. Spread mixture into tin. Bake for 8-10 minutes. Leaves to cool.
  4. To make filling, combine cooked and mashed yam with whipped cream and essence.
  5. Turn cake onto paper, spread with yam cream. Roll gently from wide end, using paper to lift cake and guide roll.

Chocolate Peppermint IceCream Cake


This recipes is on my head for quite sometimess. Finally my lazy worm is out of my body. I did it! But still have a little bit of arror. I'm sure wil be better if I do it again. I made 9"  cake and it's finished in 30 mins! I should take pix of my nieces and naphew. But I couldn't cos I'm busy cutting the cake for them. All I heard was "I still want some more please!"

Nestum Chocolate Cake


I plan to make nestum cake for my little one to bring to school. She told me she want chocolate. So I invent this new recipes Nestum Chocolate Cake. It turn out so great. It feel like eating carrot cake. I bet this cake goes well with cream cheese or peanut butter filling. I'll try to make a B'day cake with this yummy cake.
Ingredients:
210 gm Sugar
240 gm Butter
4 eggs
180 gm self raising Flour
20 gm Coco powder
1/4 tsp Baking powder
50 gm nestum
Method:
Beat butter and sugar till white add in egg 1 at a time. Add in all the sieved flour lastly mix in nestum.
Bake with preheat oven at 180'c for 40 to 45 mins.

Mango Yoghrut Cake

 

 
Happy Father's day to all the responsible fathers out there! Mango yoghurt cake. It's mango season now! Will makemore goodies with mango if I receive mangoes from friends hahaha! It's very commend over here cos alot of the house hold will plant mangoes at home. We use to have 1 at home. My dad chop it off cos it's too old and the fruits doesn't grow well. It's like human It's a risk to concieve after 40!

Mulberry

Banana Bread/cakes

Ingredients: 

1 3/4 cups all-purpose flour
3/4 cup granulated white sugar
1 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, lightly beaten
1/2 cup unsalted butter, melted and cooled
3 ripe large bananas (approximately 1 pound), mashed well (about 1-1/2 cups)
1 teaspoon pure vanilla extract

Garnish: (Optional)
A few slices of banana

Method:

Preheat oven to 350 degrees F. Butter and flour the bottom and sides of a 9 x 5 x 3 inch loaf pan. Set aside. In a large bowl combine the flour, sugar, baking powder, baking soda, and salt. Set aside.

In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla. With a rubber spatula, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.)

Scrape batter into prepared pan and place the slices of banana on top of the batter for garnish. Bake until bread is golden brown and a cake tester inserted in the center comes out clean, about 60 minutes. Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.

Makes 1 - 9 x 5 x 3 inch loaf of banana bread / banana cake.

Ben 10 B'day cake

 



Red velvet cream cheese cake covered with unsweetened coconut. Finally I manage to make a cake not cover all with fondant, just partially for the design. I'll try more design using less fondant on the cake. Cos to me it is too sweet to cover all the cake with fondant and it spoil the taste of the cake.

Oreo Cheese Cake


Very creamy yummy cheese cake.  I'm not baking this cake,  just supervise . My hubby is the one doing this cos I have left over cream cheese. I'm so lazy with migrane that nite. I told him I gonna make this cake but when he came home I was in the room watching series! Hahaha! I taste soooo good!

Teacher's Day and Fancy Dress competition!

Happy teacher's day to all the teachers out there! Today my daughter are celebrating teacher's day and fancy dress competition at school today. I crack my head for whole week and don know what to get for her teacher. As usual me last minute. Yesterday evening I decided to make cupcakes for her lovely teacher. Both her teacher and assistant teacher are so sweet and lovely. So I decided to make a sweet and lovely color for both of them.

She won her self a 2nd place. She is so happy and puzzled When her name was call. I'm shock too. Cos there are a lots of beautyful costumes. We just let her join to build up her self confidence on stage and have fun. We never expect to be won! Praise the Lord for this moment. Because before the competition start few little girls are laughing at her saying she is wearing a box.(Cos most of them dress up themself and putting make-up) And she come to me and says" mummy I don 1 2 wear anymore cos they are laughing at me saying I'm wearing a BOX" I replied her but your teachers says it is so special that is different from others. And I told her let them laugh it's ok cos we can't stop them from saying anything. May be they are jealous of you. Then she felt so much convince. Poor baby she had fever too this morning!
I love the caterpillar on the left It is sooooo beautiful! The light bup is the 60 min earth day!
